Cap of Liberty is a very old, almost-forgotten English bittersharp cider apple, well-suited to be part of a cider blend.  It's a bittersharp cider apple (high tannins and also high acid). Late season (usually in early October). This apple is just for cider; often mixed with Harrison Crab to make the perfect blend,  A good, rare variety to grow in Colorado for cider lovers and heritage fruit connoisseurs, alike.
